Ingredients
200 g of chickpea flour
600 ml of water
100 ml of extra virgin olive oil
100 g of smoked cheese
150 g of boiled ham (cut a thick slice)

Chickpea farinata with smoked provolone and boiled ham
"Farinata" is a typical pancake from Liguria, provolone a kind of Italian cheese, and everybody knows the Italian ham, “prosciutto cotto”.

Procedure
In a bowl, mix the water with the chickpea flour, help with a whisk in order to avoid lumps. Cover with a plate and let it stand for one night. Then cut in cubes the smoked provolone and the slice of ham. Add the oil, salt, pepper and rosemary to the mixture of water and chickpea flour, stir with a whisk and add the provolone and ham too. At this point, pour into a baking dish with a diameter of 20-25 cm and put in a preheated oven at 220 ° C for about 30-40 minutes. When the surface of farinata will become golden-brown you can fire up the grill top of the oven for three minutes (check, however, that you do not burn it!), in this way it will complete the formation of the delicious crust!
At this point, remove it from the oven and enjoy it! Very good hot or cold and with the accompaniment of vegetables is a complete meal.

The classic version of Farinata is made only with the chickpea flour without the addition of other ingredients such as the one proposed here, it is a close relative of Cecina in Tuscany. It is typical of Lunigiana and goes from Genova to Livorno along the north coast of Tuscany.
In this dish the chickpea flour becomes a fragrant "pancake" excellent with meats and vegetables. Children's palates will get crazy!

The farinata is an excellent example of how the flavor meet perfectly with excellent ingredients from a nutritional point of view. Chickpeas are legumes that constitutes an important contribution to our diet with proteins and some essential amino acids that are typically found in meat and fish. So in order to limit the consumption of foods of animal origin, and to vary the flavors of our tables, the farinata is a great alternative, considering the limited caloric intake. The Farinata eaten with seasonal vegetables is a great dish! The classical one prepared without the addition of ham is also good for people with celiac disease for the absence of gluten.
