Fettuccine with artichokes and ground beef

This kind of Fetticini are a great Italian recipe. With just a few ingredients such as artichokes, ground beef, flour and eggs are unable to achieve this succulent recipe. The process is simple, maybe a little longer due to the preparation of egg pasta, but it's a pretty easy recipe. Choose the proper artichokes and the result is assured.

1.5 Kg egg pasta for fettuccine (final weight, starting from 1 kg of flour)
4 artichokes
100 ml extra virgin olive oil
1 clove garlic
500 g minced meat
200 ml tomato puree
100 ml white wine
100 ml water

These ingredients are able to feed:  12persons


Prepare the pasta, once prepared the dough, put it in the refrigerator. Then roll it out with a rolling pin or if you prefer with the pasta machine. So do not get too thin layers, let it dry on wooden pastry board and when they are well dried cut your fettuccini.
For the sauce, clean the artichokes, cut the stem, remove the outer leaves, cut the apical part. Once cleaned the artichokes put them in acidulous water (water and lemon). Cut the artichokes into strips and let them brown in a bit olive oil and garlic, add the white wine and cook for a few minutes, then add a little water and continue to cook over a gentle heat. Halfway through cooking, pour the tomato puree and cook everything.
Separately, cook with a little oil and half a clove of garlic minced meat, some mix it with the artichoke sauce and keep aside a bit of it.
Cook the fettuccini in boiling salted water, when they are al dente drain and dress with the sauce with artichokes and chopped parsley, stir for a few minutes. Serve and complete the dish by adding a bit of cooked ground  kept aside and with a bit of parsley.
