Almond macaroons of Sezze

1 kg ground almonds
700 g sugar
10-11 egg whites

These ingredients are able to feed:  50persons


In a bowl put the ground almonds and sugar and mix well. Incorporate the egg whites a little at a time until you get a soft mixture. Then place in a floured baking pan (or covered with oven paper) the “ostie” (like a wafer), put on a little heap of dough with almonds, sprinkle with sugar and bake in a preheated oven at 180° C, cook them until they are golden brown.
