Wash well a lemon, then cut the peel. Cut the peel into very thin strips. Squeeze the lemon and set aside.
In a saucepan put the oil, onion (chopped very thin), chopped garlic, ginger and some of the lemon peel strips made previously. Fry the onion and garlic, after that put the chicken and brown it in all its parts. Add the lemon juice, salt and pepper and add more ginger. Cover the saucepan and cook over a gentle heat. If the cooking liquid is too dry, add a little water and finish cooking. Once cooked, serve the chicken hot with an addition of pepper on the top and with the remaining lemon zest.
