Put the egg yolks and egg whites in two different bowls. Whip the egg yolks with the sugar until you get a smooth mixture. Combine the flour and gently mix well. Add the melted butter and allowed to cool and then mix well.
Add the vanilla and carrots which you have finely chopped, mix well and add the yeast and egg whites. Mix well and distribute the mixture into buttered muffin molds. Bake at 190° C for about 30 minutes.
