Octopus Salad

The octopus salad is a very tasty and appreciated dish, it is typical of many cities that border the Mediterranean Sea, a classic recipe but never obsolete.

1.5 kg octopus
juniper berries
30 ml lemon juice
50 ml extra virgin olive oil

These ingredients are able to feed:  7persons


Prior to cook will be good to clean the octopus eliminating the mouth and emptying the interior of the bag. Furthermore, it should be softened by beating with a meat mallet or after freezing / thawing.
At this point you can proceed with boiling. Place in a pot of water, carrots, celery, garlic, onion, bay leaves and juniper berries and bring to a boil. Then dip the octopus dropping it and pulling it out of the tentacles for 3-4 times, this will facilitate their curling. Finally, dip it completely and let it cook.

When the octopus is cooked, the cooking time depends on the size, for an octopus of about 800 g takes about 50 minutes, pull it out of the water and let it cool.
