400 g bucatini
1 medium-sized cauliflower
1 clove of garlic
4 anchovy fillets under salt
50 g pine nuts
50 g raisins
1 sachet of saffron or 4 anthers of saffron
Extra virgin olive oil

Cut and wash off the tops of the cauliflower, boil in salted water for a few minutes, drain them with a skimmer when they are still al dente and keep aside the cooking water.
Chop the onion and fry in olive oil in a large frying pan, add the anchovies (remove salt) and made them into small pieces, garlic, pine nuts, raisins first softened in a bit warm water, saffron and finally the cauliflower.
Mix everything together and add half a cup of cooking water from cauliflower and cook on low heat to dry the water. Meanwhile, cook the pasta in the cooking water of cauliflower (previously set aside), drain it when it is still al dente and pour into the pan with the sauce and gentle heat “arriminare” well (ie mix well) and then ... good lunch!!
