Cream and strawberries, nothing more. The strawberry mousse pudding is a classic and always good, simple but rich in aromas and flavors. Perfect to finish a meal with friends strawberry mousse is also a great sweet snack for children maybe at the end of school and exams.

300 g strawberries (even better if wild strawberries)
125 g of sugar
250 g of whipped cream
12 sheets of gelatin
A few leaves of fresh mint

First thing to do is to put the gelatin in a bowl and soften it with water. Meanwhile, wash the strawberries, remove the petiole and mash them in a strainer or blend them using a blender. Add sugar and mix well. Whip the cream and set aside everything in the refrigerator.
Squeeze the gelatine (previously soaked with water) and melt it in a double boiler, when it is well melted blend it with the strawberry mixture and sugar and then add the whipped cream and gently with delicate movements from the bottom up. Mix well to obtain a homogeneous mixture.
Pour the mixture into small molds and put in the fridge for at least two hours. When ready to serve the mousse, dip the mold in hot water for a few seconds to remove the mousse from the mold and to put it on a serving dish decorating it with strawberries and mint leaves to your liking.
